Strawberry Scones

Yummy scones filled with lots of fresh strawberries!

So I decided a few days ago that I was ready to try my hand at canning and making preserves.  My first creation was homemade strawberry jam.  The next morning I thought I would make some fresh scones to try out my new jam on.  Since I had strawberries left, I chopped them up and threw them in the batter.  Win!  they were awesome.


> 2 cups strawberries cut into small pieces

> 2 cups flour

>3 tbsp sugar

> 2 tsp baking powder

> 1/4 tsp salt

> 2 eggs (one for egg washing scones)

> 6 tbsp unsalted butter

> 2/3 cup milk


Preheat oven to 400F

Once you chop the strawberries into pieces, add 1 tbsp of the sugar to them and set aside.

In a large bowl mix together the flour, baking powder, salt and 2 tbsp of sugar..

Add in the butter and cut it into flour mix (use your hands, 2 knives or a pastry cutter).  You want the mix to look crumbly.

Add your strawberries to the mix and coat them in the flour mixture.

In a separate bowl whisk 1 egg and the milk together then add it to the flour mix and stir it all together well.  (If your batter is too sticky add more flour so it doesn't stick to your hands.

I use a cast iron cornbread skillet for the next part since it is divided into triangles already, but you can use any large skillet or a baking sheet and make them drop scones.

Put your batter into the cornbread skillet or drop onto skillet or baking pan.

Whisk an egg in a bowl then brush it on top of the scones (this will make them a gorgeous brown color), you can also sprinkle some sugar on top (I did!!).

Place in preheated oven for 25 to 35 mins or until your scones are browned.

Remove from oven and let rest for 5 or 10 minutes then put them on a wire rack to cool.

Grab a cup of coffee or tea and enjoy your scones!
