Cast Iron Strawberry Banana Bread

The day I decided to make strawberry jam for the first time I wasn't sure how many packs of strawberries i would need.  The lady at the store helped me....she told me i would need 6.  Well guys, she was way off!  I needed 2 lol.

Here we are a few days later and I am trying to come up with ways to use up all the strawberries.  I needed to use the ripe bananas today, so making my banana bread was obvious!   Then I thought "I wonder what it would be like with strawberries".  The end result:  Cast iron strawberry banana bread!  It is really really good!  I actually like it better than regular banana bread to be honest.  You have to give it a try, trust me on this one!

If you don't have a cast iron loaf pan, not a biggie, you can make this in a skillet, it works just as well!


Makes 2 loaves!

> 1 cup softened butter

> 2 cups sugar

> 2 cups ripe bananas mashed up really well

> 4 eggs

> 1 tsp salt

> 2 tsp baking soda

> 3 cups flour

> 2 cups of strawberries diced up really small


Preheat oven to 325 and lightly grease 2 bread pans or cast iron skillets( 8 or 9 inch)

In a large bowl cream the sugar and butter together really well.

Add in the mashed bananas, mix well.

Add the eggs 1 at a time, stirring really well after each one, then set bowl aside.

In another bowl mix flour, salt and baking soda.

Add the flour mix to the banana mix stirring constantly until completely mixed.

Add in the strawberries and stir to mix into batter.

Pour batter into pans or skillets and place in oven on center rack.

Bake for 85 mins or until a toothpick comes out clean.

Remove from oven, let stand for 5 mins then remove from pan and let cool on wire rack!
