Chocolate Chip Bread


Super moist loaf or bread full of chocolate chips!!  life is grand.


So I actually had trouble deciding which category to put this in!  I mean, chocolate chip bread!!  It could be breakfast, a dessert, heck it could be a main!!  I opted for the baked goods category, that way we can eat this whenever we feel fit. 

Hubs wanted oatmeal chocolate chip cookies a while back, of course I made em!  That left me with leftover chocolate chips.  So i jumped to the recipe I use for my cinnamon loaf and using it and the chips I came up with chocolate chip loaf.  I could go on about this bread - but I won't - you are going to have to try it yourself to understand!

Ingredients:

> 2 cups flour

> 2 tsp baking powder

> 1.4 tsp salt

> 2 eggs

> 1/2 cup vegetable oil

> 3/4 cup sugar

> 1 tsp vanilla

> 1/2 cup of milk (any type works)

> 1 cup chocolate chips

Directions:

Preheat oven to 350F

Lightly wipe oil on cast iron loaf pan or cast iron skillet (a #6 probably) or any loaf pan.

In a med bowl mix flour, baking powder and salt.  Set aside.

In a large bowl beat eggs, sugar, oil and vanilla with a hand mixer on high for 3 mins until mixture thickens.

Turn mixer to low speed and add half the flour mix, then the milk, then the rest of the flour mix.

We are done with the mixer now!

Add in the chocolate chips and stir them into the batter but don't over stir!


Spread batter into your pan and put into preheated oven.

Bake for approx 1 hour or until toothpick comes out clean.

Let cool in pan for 5 to 10 mins then move to rack to cool.

Enjoy it!   This is really good guys!  Try it with a glass of milk or tea!  It's a win!
