Dutch Oven Bacon Cheeseburger Soup

So basically this is a take on cheese and potato soup.  The addition of ground beef makes it hearty enough to be a meal.  It goes great with homemade bread for dipping!


> 4 or 5 potatoes peeled and diced into small pieces

> 1 med onion diced

> 1 cup of shredded carrots

> 1 tsp dried basil

> 1 tsp dried parsley

> 1 tsp garlic powder

> 3 1/2 cups chicken broth

> 1 lb ground beef

> 10 slices bacon cooked and chopped

> 3 tbsp butter

> 1/4 cup flour

> 2 cups milk (2% or whole)

>  salt & pepper to taste

> 2 cups shredded cheddar cheese

> Green onion chopped for garnish (optional)


Put potatoes, carrots, onion, basil, parsley, garlic powder and chicken broth into a dutch oven or large pot. 

Stir, cover and cook over med heat until potatoes are soft (approx 1 - 2 hours)

In a skillet, cook bacon then remove and chop on a plate.  

Add ground beef to skillet and brown and crumble then drain off excess grease.

Once potatoes are soft, add bacon and ground beef to dutch oven and mix well.

In the skillet over med low heat melt butter then add flour and whisk until brown (about 1 min)

Whisk the milk into the flour and add salt & pepper

Add milk mixture to soup stirring well to combine everything then add in cheese.

Stir until cheese is melted then reduce heat to low and simmer for 30 mins to an hour.

Pour soup into bowls, top with some shredded cheese and green onions and enjoy!
