Jalapeno Cheddar Soup


This soup has been a favorite of mine for a long time!  It isn't too spicy, it is full of flavor, it is creamy and cheesy and just plain yummy. 
This is one that never goes to waste in this house!  Some homemade bread for dipping goes great with it!  
Hope you enjoy it as much as we do.

Ingredients:

> 2 cups chopped celery

> 2 cups chopped onions

> 1 cup chopped jalapenos (I cut the seeds out so its not too hot)

> 1 tsp garlic powder

> 6 cups chicken broth (I use no salt added)

> 2 lbs Velveeta

> 2 cups shredded cheddar (I use medium cheddar)

Directions:

You really need a blender or a hand blender for this soup!!  Hopefully you have one.

Blender:

I do it in 2 batches - half the veggies, 3 cups of chicken broth and 1 lb of Velveeta all into the blender.  Puree it until its nice and creamy with no lumps then pour it all into a large dutch oven or pot and add the garlic.

Hand Blender:

Add all ingredients except shredded cheddar to a large dutch oven or pot and use hand blender until its creamy with no lumps.

Bring to a boil over med/high heat then reduce heat and simmer for at least 30 mins so the flavors mix. 

About 10 mins before you are going to eat add in the shredded cheddar and stir until melted.

Dish into a big bowl and enjoy (Cracked black pepper on top is amazing!)
