Cheddar Jalapeno Meatloaf Wellington

I knew today was gonna be a "what have we got in the fridge" day.  Had a couple lbs of ground beef in the freezer so I decided to get creative with it.  

The end result:  meatloaf full of cheese and jalapenos with an awesome glaze made into a Wellington.

It tasted amazing!! So here I am typing it up so you can all try it too!  Hope you enjoy it as much as we did!


> 2 lbs ground beef

>  2 eggs

>  2 cloves garlic minced

>  3 tbsp ketchup

>  2 tbsp worcestershire sauce

>  3/4 cup panko bread crumbs

>  salt & pepper to taste

>  1 jalapeno diced

>  1 cup shredded cheddar

>  1 puff pastry


>  1/4 cup ketchup

>  2 tbsp brown sugar

>  1/2 tsp dijon mustard (regular mustard works too)


Preheat oven to 375F

In a bowl combine beef, bread crumbs, eggs, ketchup, worcestershire, garlic, salt & pepper.

Mix in the jalapenos and cheese.

Shape and press into a loaf pan, top with glaze and bake for 45 to 60 mins or until internal temp of 160F is reached.

Remove from loaf pan onto paper towels on a plate  to soak up some of the grease.

wash and dry loaf pan then lightly grease.

Wrap the meatloaf in the puff pastry then put it back into the loaf pan

Bake another 25 - 35 mins or until puff pastry is nice and golden brown.
