From Scratch Tomato Soup


So I figured I would try my hand at homemade tomato soup!  The end result after much tweaking for flavor came out super creamy and delicious!

This would also be good with a cup of cooked rice in it as well!  I will probably try that next time.

Hope you all enjoy it!  I won't be buying canned tomato soup ever again.

Ingredients:

 >  7 cups diced tomatoes
>  1 large onion diced
>  2 or 3 cloves garlic minced
>  3 tbsp olive oil
>  2 cups chicken or vegetable broth
>  2 tbsp honey
>  2 bay leaves
>  1 tsp oregano
>  1/2 tsp white pepper
>  2 carrots shredded
>  1/2 to 1 cup whipping cream
>  fresh parsley for garnish (optional)

Directions:

Saute onions and garlic in the olive oil in a large pot or dutch oven until onions soft

Add remaining ingredients and simmer for an hour

Use a hand blender to make it smooth (or regular blender but be careful)

Add cream

Garnish with fresh cracked black pepper and parsley and enjoy!!
