Mexican Beef Skillet

I was craving something with a Mexican flair to it, but I didn't have hours of time to make something.  So what do you do?  throw it all into a skillet of course!  


>  1 tbsp olive oil

>  1 lb ground beef

>  1 med onion diced

>  2 cloves garlic minced

>  5 - 8 tbsp Totally Taco Seasoning from Far Out Foodz (any taco seasoning will work, just not as good)

>  1 cup rice (I use Minute rice because it cooks faster)

>  2 cups chicken or vegetable broth

>  1 15oz can black beans drained

>  1 10 oz can Rotel diced tomatoes & green chilis

>  1 cup corn (frozen or canned work)

>  1 tsp chili powder

>  juice from 1 lime

>  2 cups shredded cheddar 

>  1 tomato diced (for garnish)

>  fresh cilantro or green onion diced (for garnish)


Heat olive oil in large skillet over med heat 

Add beef, onions, garlic and cook until beef browned then drain fat.

Add in taco seasoning, rice, broth, beans, tomatoes & chilis and chili powder 

Bring to a strong boil stirring constantly.

Reduce heat, cover and simmer until rice is cooked (with minute rice about 20 mins)  stir in lime juice

Top with cheese, cover until cheese is melted

Sprinkle with diced tomatoes and cilantro or green onions

Serve and enjoy!
