Cheddar Jalapeno Drop Biscuits

I was in a rush the other night, having a new puppy can really mess up your routine lol.  Anyways, I had a big dutch oven full of chili ready on the stove.  Knowing hubby, I needed something for dipping, but I didn't have time to make rolls or bread.  I decided to try adding cheddar and jalapenos to some drop biscuits since they take no time at all to make.  Huge hit!!!!  they turned out amazing!  I will absolutely be making these over and over again.


> 2 cups white flour

> 4 tsp baking powder

> 3/4 tsp salt

> 1/4 tsp garlic powder

> 1/4 cup very cold unsalted butter cut into pieces (or freeze and grate)

> 1 1/2 cups milk

> 1 large jalapeno diced small (remove seeds and membrane)

> 1 1/2 cups shredded cheddar cheese


Preheat your oven to 400F

Lightly spray a large cast iron skillet or baking sheet with cooking spray

In a large bowl, mix flour, baking powder, salt and garlic powder

Cut in the butter, use a pastry cutter, 2 knives or your hand, until the mixture is crumbly and about the size of small peas.

Add the milk, jalapenos and cheddar and stir just until mixed (do not over stir)

Drop large spoonfuls onto skillet or baking sheet making 12 biscuits

Bake for 12 to 15 mins or until sides and tops are nice and brown

Serve warm, dip them or add butter and eat them alone!  These are great!
